Fermented dairy products are fermented from the milk of all domesticated animals, which include cow, goat, buffalo, sheep, camel, and horse. The process of fermentation takes place due to the presence of natural microbes in the food products. According to the Food and Agriculture Organisation (FAO) report published in 2018, more than 6 billion people across the globe consume fermented milk products and the most of these people live in emerging countries. Per capita milk consumption has increased two-fold times in developing countries since the last few decades. However, per capita milk consumption has decreased in the sub-Saharan Africa since last two decades. The consumption of these products is estimated to rise by 125 percent in South Asia by 2030. In India, around 50 percent of milk is consumed on-farm.
